The Chophouse on Bankhead offers a true dining experience. We provide prime steaks, fresh seafood, pastas, fresh vegetables and deserts all brought in fresh from local providers when available. There is also a large selection of fine wines and a full bar, which is not currently available in the immediate area. Our menu is on par with many fine restaurants found in larger cities.
To make this vision a reality, there a four partners with various backgrounds that have come together to form a high caliber team. At the center of every restaurant is the head Chef. Ours is one of the best. Enam Chowdhury has been in the restaurant business and a chef for over 30 years. He brings with him not only a passion for cooking and love for people, but also the knowledge of the inner workings of running and managing a restaurant. Next, we have our managing partner, Jeff Schrunk, for the business who will handle all of the day to day actions under the direction of Enam. Jeff brings 20+ years in Business and Information Systems management. Our third partner, Ken Colbey, has 20+ years Finance/Accounting experience covering several industries. This mixed with his passion for great food and fine wines, will keep the finances under control. Lastly we have Mr. Brad Hyman who owns the building we will be occupying and is intimately involved with setting the ambiance and feel of the restaurant.
This group of individuals allows us to pull from multiple backgrounds and professions to provide a team who has the focus and drive to build a successful business around our love for fine dining
Karen and Enam Chowdhury
Karen and Enam Chowdhury, met on a tennis court 30 years ago and it was literally, love, game, set and match.
Karen has been an educator for 30 years in Garland, Texas, and retired in 2015. Enam has been in the ultra-luxury hospitality industry for over 30 years. Karen and Enam spent a majority of their married life in the DFW area and have recently moved to Leesburg, Texas. Enam spent well over a decade at The eponymous, Mansion on Turtle Creek, the only five star, five diamond property in Texas during the `1990’s to 2000. During Karen’s tenure at Garland ISD, her school received the National Blue Ribbon Award two times. This is the highest honor any school can receive, culminating in a trip to Washington DC to receive this prestigious award.
Enam was the Executive Chef and F&B Director at Los Pinos Winery. Karen did a variety of jobs at the winery, including service manager, wine production and vineyard maintenance. While at Los Pinos, USA TODAY rated Los Pinos the 2nd best winery restaurant in USA.
They both enjoy, fine food, wine and great company. Karen enjoys gardening, the outdoors, traveling, and scuba diving in her free time. Their family includes 3 cats and a Great Dane named Max. While at Los PInos, they befriended foodies, and eventually great friends, Jeff &Heather Schrunk, Ken and Lisa Colbey and have begun together, the journey to open the Chophouse on Bankhead.
It has always been a passion for Enam to take care of people and serving the finest food, beverage and hospitality that one can imagine. Continuing on that same path, he brings his special “Touch” to the dining experience in Mount Vernon and surrounding areas that will leave an indelible mark on the epicurean scene of East Texas.

Brad and Stephanie Hyman
Brad and Stephanie met and are graduates of Texas A&M University. They have 2 sons Chase and Cade who are both in high school at Mt. Vernon I.S.D.
Brad has worked in the crop protection industry for his entire professional career. He is Executive Vice President and manages the U.S. business for global chemical manufacturer Nufarm, based in Melbourne, Australia. Stephanie has worked in the pharmaceutical industry throughout her career and is a Senior Executive Rep with Merck & Company where she has been for over 20 years. Upon moving back to Brad’s home town 8 years ago, Brad and Stephanie began investing in buildings in the historical district in downtown Mt. Vernon, including the G.P. Hill Building, that after extensive renovation and conversion to a restaurant, is now home to the Chophouse.
Brad & Stephanie had a vision that Mt. Vernon had much to offer as a destination for dining, tourism, etc., but that there would be a journey to undertake as the local economy was struggling as are many other small rural communities around the country. The Chophouse is continued evidence of the success Mt. Vernon is having now attracting numerous restaurants, bed and breakfasts, live music, the Don Meredith Museum, and the list is growing. They are excited to have Chef Enam and the Chophouse team here in Mt. Vernon and know that they will deliver the best customer experience in Northeast Texas!
Ken and Lisa Colbey
Ken and Lisa Colbey are both East Texas natives. Married in 1999, we are the loving parents of several furry and feathered friends, including Bailey (Golden Retriever), Whiskey, (Chocolate Lab), Bella (Siamese cat) and 7 chickens (yes, Lisa is the crazy chicken lady). We both have successful and challenging careers, Ken as a Chief Financial Officer and Lisa as a Registered Nurse. Having lived in the UK for three years and traveling extensively throughout the world, we have had the pleasure of expanding and developing our palates for both great food and fine wine and spirits (thanks to living in Scotland).
We now reside on Lake Bob Sandlin and enjoy the outdoor life, spending time on the lake with friends, and beautiful sunsets. Our goal as partners at the Chophouse on Bankhead is to share our experiences and develop new friendships with all that pass through our doors. We truly hope you enjoy your time with us as we aim to make your visit a truly remarkable experience.
Jeff and Heather Schrunk
Jeff and Heather Schrunk have spent most of their adult lives in Dallas/Fort Worth, Texas raising two children, multiple cats, dogs and birds while trying to balance work and home life. While Jeff was out climbing the corporate ladder in Information Technology, Heather has been a successful entrepreneur and runs her own custom embroidery and clothing company. While doing all of these activities they had the opportunity to travel and taste wonderful food, wines and spirits along with the occasional cigar. This created in them both what you would call “Foodies” and a desire to indulge in fine food prepared by the best Chefs.
The opportunity to open a restaurant of the quality of The Chophouse on Bankhead was an opportunity that was too good to pass up and they eagerly jumped at the chance. The friendship with Chef Enam and his wife Karen was just the first step to what they believe will be a fantastic journey to great food and customer service for everyone who comes into The Chophouse on Bankhead. They encourage you to come enjoy the fine food, wine and spirits and outstanding customer service!
The Chophouse seats 70-90 and provides a fine dining experience to include appetizers, soups/salads, main entrees to include steaks, seafood, pastas, deserts, fine wine and spirits. To accompany the set menu, Chef Enam, will also offer nightly specials.
